Does plugging in headphones stop a dual camera recording on iPhone?
No. The video keeps recording without interruption, because a headphone event never touches the camera at all — it is a change to the audio route, and the two camera feeds being composited to the canvas do not run through that part of the system. The only thing that can change is which microphone feeds the recording’s single audio track, and that change is not always even audible.

What plugging in headphones cannot do
It cannot turn sound on if the recording started muted.
