Does Night Shift or True Tone change the color of dual camera video on iPhone?
No. Night Shift and True Tone both work by changing what the screen displays, not what a camera captures or what gets written to a video file. They sit downstream of everything DualCam does — the two camera images are already composited into one frame and handed to the encoder before either filter has a chance to touch a single pixel of it.
Where they do matter is the moment before you hit record. Both filters tint the preview you are looking at while you frame a shot, and that tint can make you second-guess a color difference that either is not really there or has a completely different cause.
What Night Shift and True Tone actually do
True Tone reads the color and brightness of the light around you with an ambient sensor and adjusts the display's white balance to match, so a white background looks close to white under yellow indoor bulbs and under blue-white daylight alike. Night Shift works on a schedule instead of a sensor: during whatever hours you set, it shifts the whole display toward warmer, redder tones, on the idea that less blue light in the evening is easier on the eyes. Both are real, useful features — and both are strictly about the screen.
Neither one is part of a camera's capture pipeline. They live in the part of iOS that decides how already-rendered pixels get shown on the glass, which runs entirely separately from AVFoundation's camera stack. A photo app, a video app, a game and the Home Screen all get the same treatment, because the filter is applied to the display output, not to whatever any individual app thinks it is drawing.
Why the recorded file never sees it

Why the preview can still mislead you
The screen you watch while framing a shot is subject to whichever of these two filters happens to be active, which means that for a few hours a day the live preview and the file it eventually writes are, genuinely, two different colors. If a mismatch between the front and back camera catches your eye while shooting — one side reading warmer than the other — it is worth working out whether that is coming from the two cameras themselves or from a warm-tinted screen sitting evenly on top of both.
A real front-versus-back mismatch has its own, unrelated cause: the two cameras are separate pieces of hardware with their own sensors and their own automatic white balance, so they occasionally settle on slightly different color temperatures for the same room with no filter involved at all. Night Shift and True Tone add a second, uniform tint on top of whatever that is, and because a uniform tint lands equally on both halves of a composited frame, it cannot explain a difference between them — it only makes the whole picture, correct or not, harder to judge by eye.
What to check instead of guessing from a tinted screen
When color accuracy matters for a shot — matching skin tone between two faces in a split screen, or judging whether a filter looks right — turn off Night Shift and True Tone from Control Center or Settings > Display & Brightness before you frame it, or simply shoot outside Night Shift's scheduled hours. Once you are done, the fastest way to check is to open the saved file in Photos with both filters off: the same screen, showing the same file, without the layer that was sitting in the way while you were recording.
